Fly over southern China and you can still see this character from the plane: rice paddies divided by raised paths, a grid of little fields. 田 is an aerial photograph, three thousand years before the airplane. Everything in the farming kingdom begins here.

Stairways of rice Rice made southern China — and southern China reshaped its mountains for rice. The Longji terraces ("Dragon's Backbone") near Guilin climb whole mountainsides in flooded steps, built by hand from the 13th century onward and still farmed today. Wet-rice farming fed the densest population on earth and set the rhythm of the year: flooding, transplanting, harvest — the calendar you learned to read in chapter five was, above all, a farmer's calendar.
